ROASTED SHALLOTS AND POTATOES

1/2 lb shallots, peeled
2 tbsp olive oil
2 cups heavy cream, heated
5 potatoes, peeled and sliced
Salt and pepper
Preheat oven to 350. Grease a baking pan and place the shallots in a single layer. Bake for 30 minutes and increase oven temperature to 375. Put baked shallots in a food processor and process until smooth. Add heated cream and process until combined. Season potatoes slices with salt and pepper. Grease a baking dish and spread 1/2 cup of shallot mixture on the bottom. Top with a layer of potatoes. Repeat layers. Cover dish with foil and bake for 1 hour. Remove foil and bake and additional 30 minutes. Let stand 15 minutes before serving.
