TUNA RICE BAKE

2 tbsp butter
1 clove garlic, minced
1 onion, sliced
2 stalks celery, sliced
1 tbsp flour
1 cup milk
2 eggs, beaten
1/4 cup shredded cheddar cheese
1 (13 1/2 oz) can tuna, drained and flaked
Salt and pepper, to taste
2 cups cooked long grain rice

Melt butter in a sauce pan and add next 3 ingredient and cook until onion is clear. Stir in flour and cook until frothy. Gradually add milk, stirring until mixture boils and thickens. Remove from heat.

Add a small amount of the sauce to the eggs, and then add egg mixture and cheese back into the saucepan until well combined. Stir in tuna. Season with salt and pepper. Combine tuna sauce and rice. Pour mixture into a grease casserole dish and bake at 375 for 20 minutes or until golden. Serves 6
