*ROASTED ONION MASHED POTATOES*
Category: Mashed Potatoes
2 medium onions, peeled
1 tbsp olive oil
4 large potatoes, peeled and diced
3 tbsp butter
1/2 to 3/4 cup milk
Salt and pepper, to taste
Preheat oven to 350. Toss whole peeled onion with oil and place on a cookie sheet. Cook until soft, about 1 hour. Cool slightly. Puree.
Boil potatoes until soft. Drain. Place in a mixer and add remaining ingredients. Add additional milk if needed. Check for additional salt and pepper. Serve warm. Serves 4 NOTE: Good with pork or beef.
My Variations: For Garlic Cheesy Roasted Onion Mashed Potatoes: While potatoes are boiling, add 4-6 peeled, whole cloves garlic. Drain and mash as above with the garlic. Stir in about 1/2 to 1 cup shredded Asiago Cheese.
Baked Garlic Cheesy Roasted Onion Mashed Potatoes Casserole - Make as above and then place in a butter casserole dish. Sprinkle top with additional shredded cheese and bake in the oven at 425 until cheese has browned on top, about 5-10 minutes.
