COUNTRY ROASTED POTATOES

2 lbs new potatoes
2-3 tbsp olive oil
1 tsp minced fresh rosemary or 2 tsp dry
1-2 tsp minced garlic
Salt and pepper, to taste

Boil potatoes for 15 minutes. Drain and quarter. Preheat oven to 450. In an ovenproof skillet, cook potatoes in oil over moderately high heat until golden. Add rosemary, garlic and season with salt and pepper. Place skillet in oven. Bake for 5-10 minutes.

Variation: Do not boil the potatoes. Wash and wipe completely dry. Combine with remaining ingredients and mix (can add juice of 1/2 lemon, optional) and place on a baking sheet and roast at 350 for 30-45 minutes, or until potatoes are lightly browned and tender. Shake the pan occasionally to turn the potatoes and to brown evenly. Serves 4-6
