WRAPPED CATFISH WITH CREAM CHEESE

4 (6-8 oz) catfish fillets
1/2 tsp salt
1/4 tsp pepper
1 tsp lemon juice
1 cup bread crumbs
3 tbsp cream cheese
1 tbsp lemon juice, chopped celery and onion
1 tsp dried parsley and ground thyme
1/2 tsp salt
1/4 tsp pepper
8 slices bacon
Garnish: lemon slices and pimiento strips
Thaw fish if frozen. Season with salt and pepper then sprinkle with lemon juice. Combine bread crumbs and next 8 ingredients. Divide stuffing into 4 portions and place 1 portion in each fillet. Roll fish around stuffing. Fry bacon until cooked but not crisp. Wrap 2 slices of bacon around each fillet and secure with a toothpick. Place on a lightly greased baking sheet. Bake at 350 for 15-20 minutes or until fish flakes easily. Remove toothpick before serving. Garnish. Serves 4
