1 cup chopped broccoli
1/3 cup chopped onion
1 clove garlic, minced
1 tbsp butter
35 Italian ranch snack crackers, crushed
1/4 cup chopped red bell pepper
1/3 cup shredded carrot
1 egg
1 tsp dried dill
6 (4 oz) flounder fillets
2 tbsp lemon juice
1 tsp paprika
Garnish: Chopped parsley and lemon slices

Preheat oven to 375. In a skillet, cook first 3 ingredients in butter until tender. Remove from heat; cool slightly. Stir in next 5 ingredients. Spoon stuffing onto 1 end of fillets and roll up encasing stuffing. Arrange in a baking dish and sprinkle with lemon juice and parsley. Bake for 15-20 minutes. Garnish. Serves 6
