TILAPIA WITH LIME BUTTER AND CAPERS

4 tilapia fillets
4 tbsp butter or olive oil
Salt and pepper, to taste
4 tbsp butter
Juice of 4 limes
4 tbsp capers

Heat an 8 inch skillet to medium, add butter or oil. Season fish with salt and pepper and add to skillet. Pan-fry until fish flakes with a fork. Remove from skillet and add butter. Once foaming has subsided, add lime juice and capers. Heat to simmer and pour over fish. Serves 4
