STUFFED FISH FILLETS

1 lb catfish fillets (fresh or frozen, thawed)
8 oz frozen salad shrimp
8 oz fresh bay scallops
8 oz imitation or fresh crab meat
1 egg
1 small onion diced
2 cloves of garlic diced
1 cup Italian bread crumbs
1/2 cup melted butter
1 tbsp lemon juice
1/4 cup melted butter (reserve for top of fish)
Preheat oven to 350. Combine all ingredients, except the fish and reserved butter, until moist. Place fish in the palm of your hand and place 2 to 3 tbsp of stuffing on each fillet. Wrap fish ends together until they meet. Place in a shallow baking dish, seam side down. Repeat with remaining fish.
Bake for 10 minutes and brush with the melted butter. Bake an additional 20 minutes or until fish and scallops are done. Brush with pan juices 5 minutes before taking out of oven.
