PIZZA SOUP

1 1/2 lbs ground beef
1 pkg sliced pepperoni (separated)
1 (8 oz) pkg sliced mushrooms
1 medium red onion, finely chopped
2 (26 oz.) cans condensed tomato soup, undiluted
1 (10 1/2 oz.) can condensed tomato soup, undiluted
1 (14 oz.) can beef broth
4-5 cups water
1 (26 oz.) jar spaghetti sauce
1 1/2 tbsp Italian seasoning
2 cups shredded cheddar cheese
Shredded mozzarella cheese for garnish, optional
In a large soup pot, cook ground beef until no longer pink and then drain. Add mushrooms and onions and saute 5-10 minutes. Add pepperonis. Add the soup, broth, water, spaghetti sauce and Italian seasoning; bring to a boil. Reduce heat; simmer, uncovered for 15 minutes.
Add cheese; cook and stir until melted. Garnish with mozzarella cheese if desired. Yield: 18-20 servings
