PINA COLADA WEDGES

Crust:
1/3 cup melted butter
1-1/3 cup graham crumbs
1/4 cup sugar

Filling
1 (8 oz) pkg cream cheese, room temperature
1/3 cup sugar
2 tbsp rum
3 1/2 cups whipped topping
1 small can crushed pineapple, undrained
2 2/3 cups coconut

Crust: Mix all crust ingredients together and press into 9-inch pie pan. Bake for 8 minutes at 375 degrees. Cool.

Filling: Beat first 3 ingredients until smooth. Fold in 2 cups whipped topping, pineapple with juice and 2 cups coconut Pour pina colada mix onto crust. Spread with remaining whipped topping and sprinkle with coconut. Freeze until firm, about 2 hours. Cut into wedges Garnish with pineapples and cherries if desired.
