CHOCOLATE CHIP PECAN MINI BROWNIE BITES

4 oz unsweetened chocolate, finely chopped
4 oz bittersweet chocolate, finely chopped
8 oz unsalted butter
5 eggs
2 cups granulated sugar
1 cup light brown sugar, firmly packed
1 vanilla bean, seeds scraped, pod discarded
1 2/3 cup flour
1 tsp salt
3/4 cup semisweet chocolate chips
3/4 cup pecans, toasted, chopped

Preheat oven to 325. Grease 2 mini muffin pans. In a double boiler, melt together butter and chocolate. When completely melted, whisk to combine and set aside to cool.

Mix together the eggs, sugars, and vanilla bean. Mix until a pale yellow color forms, about 5 minutes. Add in cooled chocolate mixture and beat for 2 minutes. Add flour and salt and mix just until incorporated. Fold in the chocolate chips and nuts. Using a mini muffin scoop, scoop batter into prepared pans. Bake for 16-20 minutes depending on how gooey you like your brownie.
