NO-BAKE CHOCOLATE-OATMEAL-PEANUT BUTTER COOKIES

2 cups sugar
1/4 cup butter
1/2 cup milk
1/4 cup unsweetened cocoa powder
1/2 cup quick rolled oats
1 tsp vanilla extract

Cover a large countertop area or a large baking sheet with waxed paper. In a 2-quart saucepan over medium heat, bring the sugar, butter, milk, and cocoa to a boil, stirring until the sugar dissolves and the mixture begins to boil. Boil 1 minute. Remove from heat. Stir in the peanut butter, oats, and vanilla until combined. Quickly drop by spoonfuls onto the waxed paper. Cool. Store in an airtight container.
