ROSEMARY-GARLIC ROASTED CHICKEN

1 whole broiler-fryer chicken
2 tsp rock salt
4 clove garlic, minced
2 tbsp minced rosemary
1 tsp pepper
2 tbsp olive oil
1 tbsp white wine
Rosemary sprigs
Loosen skin by placing fingers between skin and meat, beginning at neck and gently working around the breast to drumsticks.
In a bowl, combine seasonings, olive oil and wine; rub mixture until chicken skin and into cavity. Place rosemary sprigs in cavity, tie legs together and place on a roasting rack coated with cooking spray. Bake at 325 for 1 hour 45 minutes or until fork can be inserted in chicken with east. Serves 4
