POTATOES O BRIEN

Category: Hash Brown Potatoes/Casseroles

4 medium potatoes, peeled and sliced, cut in 1/2 inch cubes
2 green onions, white and green parts, finely sliced
1/2 green bell pepper, 1/8 inch diced
5 fresh basil leaf, chopped
3 tbsp bacon drippings

Fry potatoes in bacon dripping until golden brown, stirring frequently so all pieces are evenly browned. Add remaining ingredients and saute on medium to high heat until peppers are tender.
