1/2 cup butter
1/2 cup sugar
1 egg, separated
1/2 tsp vanilla extract
1 cup flour
1/4 tsp salt
1 cup ground nuts
1/2 cup preserves/jelly
Beat butter and sugar until fluffy. Beat in egg yolk and vanilla. Stir in vanilla and salt until well blended. Shape dough into 1 inch balls. Dip each ball first into unbeaten egg white; then roll in ground nuts. Place on ungreased cookie sheets 2 inch apart. With your thumb, make a deep indentation in center of each ball. Bake at 325 for 5 minutes. Make fresh imprints in each cookie using wooden spoon handle. Bake 8-13 minutes longer. Spoon a little jelly into depression of each cookie.
