CREAMY BOW TIES WITH SAUSAGE AND TOMATOES

2 tbsp olive oil
1 lb sweet Italian sausage, crumbled
1/2 tsp dried red pepper flakes
1/2 cup diced onion
3 clove garlic, minced
1 can Italian plum tomatoes, drained and coarsely chopped
1 1/2 cups whipping cream
1/2 tsp salt
1 (12 oz) pkg bow tie pasta, cooked al dente, drained
3 tbsp minced fresh parsley
Garnish: Parmesan cheese and parsley
While pasta is cooking, heat oil in a large skillet and add sausage and pepper flakes. Cook until sausage is no longer pink, stirring frequently, about 7 minutes. Add onion and garlic and cook until onions are tender and sausage is slightly brown, stirring occasionally, about 7 minutes. Add tomatoes, cream and salt. Simmer until mixture thickens slightly, about 4 minutes. Serve sauce over drained pasta and sprinkle with parmesan cheese and parsley. Serves 4
