APPLE LANE CAKE

1 cup butter, softened
2 tsp baking powder
1/4 tsp salt
1 tsp vanilla extract
2/3 cup milk
1/2 tsp cinnamon
8 egg whites (reserve yolks)
1 1/2 cups sugar
2 1/2 cups flour, unsifted
1/2 cup pared, shredded Red Delicious apple (about 1 medium)

Apple Filling
8 egg yolks
1 tsp vanilla
1 cup sugar
1 cup chopped pecans
1/4 tsp salt
2 cups pared, chopped Red Delicious apples
1/2 cups bourbon
1/2 cups butter, melted and cooled

Beat egg yolks, sugar and salt until light and thick. Gradually beat in bourbon and then butter. Cook on top of double boiler over simmering water, stirring constantly until thickened, about 10 minutes. Cool. Stir in apples.

In large bowl cream butter, sugar, cinnamon and vanilla. Sift together flour, baking powder and salt. Add flour mixture alternately with milk to creamed mixture. Beat egg whites until stiff but not dry. Stir a little egg white into batter and stir in shredded apple. Fold batter into remaining egg whites. Turn into 3 greased and floured 9-inch pans. Bake at 350 degrees for 20-25 minutes or until done. Cool 10 minutes. Turn out of pan and finish cooling. Spread Apple Filling between layer and on top of cake. Frost sides with any cooked (7-Minute, etc.) frosting.
