BLUE CHEESE TOPPING

2 cups crumbled blue cheese
1/2 cups chopped red onions
1/4 cup chopped parsley
1/3 cup olive oil
3 tbsp red wine vinegar
2 cloves garlic, minced
1/2 tsp pepper
In a pie plate, sprinkle blue cheese in an evenly layer. Top with onions and parsley. In a small bowl, combine remaining ingredients and mix well. Pour over blue cheese mixture. Cover and chill for at least 1 hour before serving. Serving
NOTE: Using as a chunky dressing, as a topper for burgers or top crusty bread, crackers and apple and pear slices.
