CHOCOLATE MINT SUGAR COOKIE DROPS

2 1/2 cups flour
1 1/2 tsp baking powder
3/4 tsp salt
1 1/4 cups sugar, divided
3/4 cup vegetable oil
2 eggs
1 tsp vanilla
1 (10 oz) pkg mint chips

In medium bowl, combine 1 cup sugar and oil; mix well. Beat in eggs and vanilla. Gradually beat in flour mixture. Stir in chocolate morsels. Shape into balls using rounded teaspoonfuls of dough. Roll in remaining 1/4 cup sugar. Place on ungreased cookie sheets and bake at 350 for 8 to 10 minutes. Cool completely on wire racks. Makes 3 1/2 dozen.
