CHICKEN BAKE ITALIAN STYLE

3 1/2 to 4 lbs chicken pieces
1/4 cup flour
1 tsp salt
1/8 tsp pepper
1/2 tsp paprika
2 tbsp olive oil
1/2 cup chopped onion
1 clove garlic, minced
1 cup water
1 envelope spaghetti sauce mix
1 can (14.5 oz) diced tomatoes
1 tbsp dried leaf parsley
6 potatoes cut into 1 inch cubes
1 large green bell pepper, cut into strips
Wash chicken and pat dry. Combine flour, salt, pepper, and paprika in a food storage bag. Add chicken, a piece or two at a time, and toss to coat well.
In a large skillet, heat olive oil over medium heats. Brown chicken, two or three pieces at a time. Place chicken in a 2-quart baking dish.
In the same skillet, saute onion and garlic until onion is tender. Stir in water and spaghetti sauce mix; bring to a boil. Stir in tomatoes and parsley. Simmer, uncovered, 15 minutes.
Pour sauce mixture over chicken in casserole then top with potatoes and green pepper strips. Cover and bake at 350 for 1 1/2 hours, until chicken is tender. Serves 4 to 6.
