CAJUN SHRIMP

Category: Seafood and Fish - Grilled


1 1/4 lb large shrimp, shelled and deveined
1 tbsp fresh lemon juice
Cooking oil
2 tbsp chopped flat-leaf parsley
Cajun seasoning
1/2 tbsp EACH chili powder and paprika
1/2 tsp each garlic powder and onion powder
1/4 tsp each pepper, cayenne pepper, crushed dried oregano and crushed dried thyme


Light grill or preheat broiler. In a small bowl, combine seasoning ingredients. Add shrimp and toss to evenly coat. Thread shrimp onto 4 metal skewers and drizzle with lemon juice. When ready to grill, lightly brush grill rack with oil. Grill shrimp until they are cooked through and lightly charred around edges, 3 to 5 minutes per side. Sprinkle with parsley and serve hot. Serves 4
