BRIE AND APRICOT PHYLLO BITES

1 (8 oz) wedge Brie cheese, rind removed
30 frozen phyllo shells
1/2 cup butter, melted
2/3 cup apricot preserves
2 cups fresh or dried apricots, finely chopped
1/4 - 1/2 cups sliced almonds
Preheat oven to 350. Cut brie into 30 (1/2 inch) cubes. Arrange the phyllo shells on a baking sheet. Brush the shells with the butter. Bake for 5 minutes. Remove from the oven and let cool on the baking pan.
Spoon 1 tsp of preserves into each shell. Place a piece of the brie in each prepared shell. Top with a small amount of apricots and sprinkle with almonds. Bake for 5-10 minutes or until brie is melted and beginning to brown. Serve warm.
