APPLE TORTELLINI SALAD

Salad
2 cups sliced apples
1/2 cup thinly sliced celery
1/4 cup sliced green onions
8 cups torn salad greens
1 cup sliced fresh strawberries
1 pkg (9 oz.) refrigerated cheese-filled tortellini

Apple Juice Dressing
1 tbsp Apple cider vinegar
1/2 tsp lemon pepper
3 tbsp frozen apple juice concentrate, thawed
2 tbsp pine nuts, toasted, optional
2 tbsp chutney
2 tsp Dijon mustard

Combine all dressing ingredients. Cover dressing and refrigerate. Cook tortellini according to pkg directions. Drain and cool thoroughly. In large mixing bowl combine tortellini and salad ingredients. Toss gently with apple juice dressing and serve immediately. Makes six 2-cup servings.
