APRICOT GLAZED PORK KABOBS I

Category: Kabobs/Kebobs/Skewers

1 (10 oz) jar apricot preserves
4 tbsp orange liqueur or orange juice
4 tbsp butter
1 lb boneless pork loin, cut into 1 inch cubes

Stir together first 3 ingredients in a saucepan and simmer until butter melts and preserves have dissolved. Place cubes in a resealable bag and pour in 3/4 cup apricot mixture. Marinate for 30 minutes. Thread pork onto 4-6 skewers and grill over hot coals for 10-12 minutes, turning once. Baste often with marinade. Warm remaining sauce and serve alongside kabobs. Serves 4
