SPINACH SOUFFLE PIE

1 box (9-inch) rolled pie crusts (enough for a double-crust pie)
1 (12 oz) box spinach souffle
15 oz ricotta cheese
1 cup shredded mozzarella
1 cup grated parmesan cheese
1 cup shredded sharp cheddar
1/4 tsp ground nutmeg
1 tbsp ground black pepper
Cook spinach souffle in microwave according to on box. Preheat oven to 350. Press bottom pie crust into glass pie dish. Set aside.
In a large bowl, combine the spinach souffle and cheeses. Add nutmeg and pepper, and mix. Pour into bottom pie crust. Place second pie crust on top of filling and seal edges. Bake for 40 minutes. Let stand for 10 minutes, and cut into wedges.
