LEMONY LEMON BREAD

1/2 cup butter
1 cup sugar
2 eggs, slightly beaten
1 1/4 cups flour, sifted before measuring
1 tsp baking powder
1/2 tsp salt
1/2 cup milk
1/2 cup finely chopped nuts
Grated lemon peel

Topping
1/8 cup sugar
Juice of 1 lemon

Preheat oven to 350. Cream butter with sugar. Mix in eggs. In a separate bowl, sift dry ingredients alternately adding to the butter mixture with the milk, beating constantly. Mix in the nuts and lemon peel. Pour into a greased loaf pan and bake for 45 minutes. Just before taking out of oven, make topping.

Topping: Combine sugar and lemon juice and mix well. As soon as the bread comes out of oven, turn out of pan onto a cooling rack. Poke holes in top with a fork and slow spoon the topping over the loaf. Let cool completely before slicing.

NOTE: Make sure to mix the topping just before using or it will not be smooth.
