MARINATED CHINESE GRILLED PORK TENDERLOIN

1 1/2 to 1 lb pork, sliced lengthwise
1/2 tsp ground ginger
1 scallion, chopped
2 clove garlic, minced
3 tbsp soy sauce
1/2 tsp salt
1 tbsp chili sauce
6 tbsp dry sherry
1 tbsp hoisin sauce
2 tbsp honey
Combine ingredients except meat and 1 tbsp honey in a resealable. Mix to combine. Add meat and marinate 2-3 hours, turning often. Remove from marinade and brush with reserved honey. Grill 4-6 inches from medium hot coals for 1 hour. Turn, basting often with marinade.
When done, remove from grill and allow to rest about 10 minutes before slicing diagonally about 1/4 inch thick. Serves 4 NOTE: Good served with Chinese hot mustard, hoisin sauce or sweet and sour plum sauce.
