BACON MUFFINS

6 slices bacon, cooked crisp and chopped
2 cups sifted flour
3 tsp baking powder
1 tbsp sugar
1/4 tsp salt
1 egg beaten
1 cup milk
2 tbsp bacon fat or melted butter
1/2 cup grated cheese

Preheat oven to 400. Stir together the dry ingredients in one bowl and mix together egg, milk and bacon fat in another. Add dry ingredients along with the bacon and cheese to the wet mix until just combined. Mixture will be somewhat lumpy. Spoon into sprayed muffin pans and bake for 25 minutes or until done.
