APRICOT MUFFINS
Category: Muffins
1 cup dried apricots, cut up
1 cup boiling water
1/2 cup butter
1 cup sugar
3/4 cup sour cream
2 cups flour
1 tsp baking soda
1/2 tsp salt
1 tbsp grated orange peel
1/2 cup chopped nuts
Topping
1/4 cup sugar and orange juice
Preheat oven to 400. Spray muffin pan with cooking spray. Combine apricots and water and let stand 4 minutes. Drain and set aside.
In a bowl, cream butter and sugar until fluffy. Add sour cream and mix well. Combine dry ingredients and add to butter mixture. Mix until just combined. Fold in remaining ingredients and reserved apricots. Batter will be stiff. Spoon into muffin pan filling each almost to the top. Bake for 18-20 minutes or until done.
Topping: Combine sugar and orange juice; dip tops of warm muffins in mixture. Allow to cool.
