ITALIAN FRIED CAULIFLOWER

1 head cauliflower, cut into section and steamed
3 eggs
Italian bread crumbs
Fresh chopped parsley
Grated Romano cheese
Olive oil

Heat a liberal amount of olive oil in a skillet to cover the bottom but make sure the heat is not to hot or the cheese will burn easily. Make a breading station: In one dish, have bread crumbs and cheese mixed together. In another, the beaten eggs. Dip cauliflower in egg, then in crumb mixture, coating well. Allow to rest on a wire rack until all are breaded. Fry breaded cauliflower in oil until golden brown. Drain on paper towels and season with salt.
