TEX-MEX SOUP

1 lbs ground chuck
1/2 tsp salt
1/2 tsp ground black pepper
2 cups chopped onion
1 (1.4-oz) pkg taco
Seasoning mix
2 tsp minced garlic
4 cups vegetable stock
2 cups frozen corn kernels
1 (14.5-oz) can fire-roasted tomatoes
1 (4-oz) can green chilies, diced
1 (1-oz) pkg dry ranch dressing mix
11/2 tsp ground cumin
1/4 tsp ground cayenne pepper

In a large pot, cook ground chuck, salt, and pepper over medium heat until meat is browned. Drain meat, and return to pan. Add onion, taco seasoning, and garlic; cook for 6 minutes, or until vegetables are tender. Add stock, corn, tomatoes, chilies, ranch dressing mix, cumin, and cayenne; cook for 25 minutes. Serve hot.
