STRAWBERRY MUFFINS

1 1/2 cups flour
1 1/2 tsp baking powder
1/4 tsp salt
1/3 cup sugar
1 large egg
1/2 cup buttermilk
1/3 cup vegetable oil
1/4 cup strawberry jam
3/4 cup fresh strawberries, diced

Preheat oven to 375. Spray muffin pan with cooking spray. Combine first 4 ingredients in a bowl. Beat egg with buttermilk in another. Stir in oil and jam. Add strawberries. Stir liquid into dry ingredients until just blended. Divide mixture into muffin pan. Bake for 15-18 minutes or until toothpick inserted in center comes out clean. Cool for 5 minutes in pan before taking out to a wire rack to cool completely.
