BUSY DAY HAM AND POTATOES CASSEROLE - Easy

2 (20 oz) pkg diced frozen potatoes
1/2 cup onion and green or red bell pepper, diced fine
2 cups shredded sharp cheddar cheese
1 cup sour cream
1 can cream of mushroom soup
2 cups diced cooked ham
Salt, pepper and garlic powder, to taste
Topping: Additional shredded sharp cheddar cheese

Mix together in a 13x9 inch baking pan and bake for 50 minutes at 350 or until potatoes are done. About the last 5 minutes, sprinkle with additional shredded sharp cheddar cheese and bake until the cheese has melted.
