APPLE LOAF CAKES

4 cups peeled, diced apples
1 1/2 cups chopped nuts
2 cups sugar
1 1/2 cups raisins
1 tsp cinnamon
1/2 tsp nutmeg
1 cup salad oil
1/2 tsp salt
2 tsp baking soda
3 cups flour
1 tsp vanilla extract
2 eggs, beaten

Combine first 4 ingredients in a large bowl and let stand for 1 hour. Preheat oven to 350. Grease and flour 2 loaf pans. Add dry ingredients to apple mixture and stir with a wooden spoon. Add remaining ingredients. Pour into prepared pans and bake for 1 1/4 hours. Allow to cool in pan for 10 minutes before removing.
