LINGUINE WITH ARTICHOKES AND GARLIC

1 (12-oz) pkg linguine
3 tbsp extra-virgin olive oil
8 cloves fresh garlic, finely chopped
3 tbsp chopped fresh parsley
1/3 cup crumbled Gorgonzola cheese
1 (9.9-oz) can artichoke hearts, chopped
Freshly ground black pepper to taste
Grated Parmigiano-Reggiano cheese
Garnish: fresh parsley

Cook pasta according to pkg instructions. In a large skillet, heat olive oil over medium heat. Cook garlic in oil for 1 minute. Add fresh parsley, stirring until wilted. Add Gorgonzola cheese, stirring until melted. Add artichoke hearts and black pepper, stirring for approximately 1 minute. Toss with cooked pasta and top with Parmigiano-Reggiano. Garnish with a fresh sprig of parsley, if desired. Serves 4
