LINGUINE WITH HAM, PEAS AND MUSHROOMS

1 (8 oz) pkg linguine, cooked al dente, drained
2 tbsp olive oil
4 scallions, including tops, thinly sliced
3 clove garlic, minced
8 oz mushrooms, thinly sliced
4 oz baked or boiled ham, cut into matchstick strips
1 1/2 cup frozen peas, thawed and drained
1 1/2 cups chicken broth
1/ tsp pepper
1 tbsp butter
1/3 cup parmesan cheese
Heat 1 tbsp oil in a skillet and saute scallions and garlic for 3 minutes. Add mushrooms and remaining oil; saute 3 minutes longer. Add ham and saute, stirring for 1 minute. Add peas, stock and pepper, increase heat to high and boil, uncovered, for 3 minutes or until liquid is slightly reduced. Remove from heat and swirl in the butter. Add pasta and cheese; toss lightly. Serve with additional cheese on the side. Serves 4-6
