CABBAGE SOUP

3 1/2 quarts water
3-4 cups potatoes, peeled and quartered
1 1/2 lbs smoked ham
2 lbs cabbage, cored and roughly sliced
8 peppercorns, crushed
6 sprigs parsley, with 1 bay leaf
1/2 tsp marjoram and thyme
4 clove garlic, minced
2 celery and carrots, peeled and sliced
2 cups cooked navy beans
Place first 3 ingredients in a stockpot and bring to a boil. Add the remaining ingredients except the beans and simmer, partially covered, about 1 1/2 to 2 hour or until meat is tender. Discard parsley. Remove meat from pan, slice into serving pieces and return to pot. Add beans and continue simmering, 10-15 minutes. Skim off accumulated fat and adjust seasonings. Serve with toasted French bread slices. Serves 8
