GOLDEN BROILED CHICKEN

2 clove garlic, minced
1/2 tsp dried, salt, crushed rosemary, cayenne pepper and black pepper
13 tbsp lemon juice
2 tbsp yellow cornmeal
1/2 cup vegetable oil
2 (3 1/2 lbs) chickens, cut up into serving pieces

In a small bowl, mash garlic and salt to make a paste. Add remaining seasonings, lemon juice and cornmeal and mash until fairly smooth. Stir in oil until blended.

Place chicken in a shallow dish and spoon mixture over pieces, spreading to coat evenly. Let stand, uncovered, at room temperature, for 1 hour.

Preheat the broiler and place chicken, skin-side up, on a rack and broil, about 5 inches from the heat until the juices run clear, about 20 minutes per side. Serves 8
