PASTA AL FORNO II

Sauce
4 tbsp olive oil
4 tbsp minced onion
2 clove garlic, minced
1 carrot, diced fine
2 celery stalks, diced fine
1 lb ground beef
Salt, red pepper flakes and pepper, to taste
1/4 cup chopped fresh parsley
2 (14 oz) cans chopped tomatoes
1 lb rigatoni or ziti pasta, cooked al dente
12 oz Mozzarella or Fontana cheese, diced
3 oz grated parmesan cheese
While pasta is cooking, make the sauce by sauting vegetables in oil in a pan and adding meat until cooked and browned. Drain. Add tomatoes, seasonings and parsley and simmer for 30 minutes until thickened.
After draining the pasta and toss in the sauce. Fold in the diced cheese and place in a casserole dish and sprinkle with parmesan cheese and bake at 400 until bubbly. Serve immediately.
