SOUTHWESTERN POTATOES

1 medium onion, thinly sliced
4 medium potatoes, cut in 1/2 inch cubes
1 tsp seasoned salt
1/2 tsp chili powder
1/4 tsp ground cumin
1 (4.5 oz) chopped green chilies, undrained
1 cup shredded sharp cheddar cheese
Salsa, chopped fresh cilantro or sour cream, garnishes

Preheat oven to 450. Spray a casserole dish with cooking spray. Sprinkle with onions, top with potatoes, combine seasonings and sprinkle over potatoes. Top with chilies. Bake for 30-35 minutes or until potatoes are tender. Sprinkle with cheese and return to oven until cheese melts. Serve with garnishes.

Note: Good made as above but cooked in a sprayed foil packet and grilled 15-18 minutes.
