STEAK ROLL UP

1 thin sliced round steak
1 medium onion, sliced or chopped
1/2 lb bacon or prosciutto
Salt and pepper, to taste
1 cup water

Preheat oven to 325. Fry bacon until crisp. Remove from pan and drain most of fat. Season steak. Put the bacon and onion in the middle of the steak. Roll the steak starting at the short end and tie with a string or secure with skewers.

Brown the steak in the same pan you cooked the bacon on high until brown on all sides. Place roll-up in an oven-proof dish, pour in water, cover tightly and cook for 2 to 2 1/2 hours. Check during last hour of cooking to make sure liquid is not evaporated. Add additional water if necessary. Remove roll-up onto a serving platter, removed string or skewers, slice and serve. Serves 4
