APPLE CAKE II

2 eggs
2 cups sugar
1 tsp vanilla extract
2 tsp salt
1 1/2 tsp baking soda
1/2 cup shortening
1/2 cup water
2 cups flour
1 tbsp cinnamon and nutmeg
4 cups diced apples
1/2 cup chopped nuts

Topping
3 tbsp butter
1 egg
1/2 cup packed brown sugar
1 tsp rum extract

Preheat oven to 350. Cream first 6 ingredients. Add next 3 ingredients and beat well. Stir in apples and nuts. Pour into a greased 13x9 inch baking pan and bake for 50-60 minutes. Cool completely. Add topping. Refrigerate. Store in refrigerator.

Topping: Melt butter in a small skillet. Beat egg and combine with brown sugar. Add to butter. Cook slowly over very low heat until thickened. Add extract. Cool and mix with 1 (4 1/2 oz) tube whipped cream.
