HUNGARIAN SAUSAGE AND SCALLOPED POTATO CASSEROLE

8 to 10 red potatoes, boiled, cooled and diced
1 cup sour cream
2 large, spicy, dry sausages, diced
4 scallions, finely minced
1/2 cup unsalted butter, melted
Paprika, salt and pepper, to taste
1/2 cup grated parmesan cheese
1 cup shredded sharp cheddar cheese
1 cup milk
Paprika, bread crumbs and additional parmesan cheese, for dusting

Preheat oven to 350. Place 1 layer of potatoes in a 13x9 inch baking pan. Sprinkle with seasonings and continue layers and seasonings. Reserve enough potatoes for final layer. On second to the last layer, sprinkle with sausage, sour cream, melted butter, cheese and scallions.

On final layer, sprinkle with shredded cheese and paprika. Pour milk through gaps in dish and bake for 45 minutes. Let rest 10 minutes before serving. Serves 8-10

NOTE: Can be made a day ahead and baked as above. This also freezes well.
