BAKED CHICKEN AND RICE DELIGHT

4-5 cups cooked chicken
3 tbsp butter
1 large onion, chopped
1 cup 1 cup uncooked regular long grain rice
Salt, basil, rosemary and pepper, to taste
2 cups chicken broth
1 can evaporated milk

Preheat oven to 350. Place chicken in a shallow pan and sprinkle with seasonings. Saute onions in butter until tender and place on top of chicken. Sprinkle with rice and add enough broth to cover. Cover pan with foil and bake at least 1 1/2 hours. Add milk, recover pan, and bake another 30 minutes without stirring. Serves 4
