MEXICAN TURKEY ROLL-UPS

2 1/2 cups cooked cubed turkey
1 1/2 cups sour cream, divided
3 tbsp taco seasoning, divided
1 can cream of mushroom soup
1 1/2 cups shredded sharp cheddar cheese, divided
1 small onion, chopped
1/2 cup salsa
1/4 cup sliced ripe olives
10 (7 inch) flour tortillas

Garnishes
Additional Shredded sharp cheddar cheese
Shredded lettuce
Chopped tomato
Additional salsa

In a bowl, combine turkey, 1/2 cup sour cream, 1 1/2 tsp taco seasoning, half the soup, 1 cup cheese, onion, salsa and olives. Place 1/3 cup filling on each tortillas. Roll and place seam side down, in a greased 13x9 inch baking pan.

Combine remaining sour cream, seasoning and soup; pour over tortillas. Cover and bake at 350 for 30 minutes or until heated through. Sprinkle with remaining cheese. Serve with garnishes. Serves 4-6
