POLKA DOT CHEESECAKE

3/4 cup graham cracker crumbs
2 tbsp sugar
4 tbsp butter, melted
2 lbs cream cheese
1 tsp vanilla extract
1/4 tsp almond extract
1 3/4 cup sugar
4 eggs
2 (1 oz) squares unsweetened chocolate
Preheat oven to 350. Combine cracker crumbs, sugar and melted butter. Spray an 8 inch springform pan with cooking spray and pack crumb mixture into bottom of pan to form a crust. Set aside.
Beat cream cheese until smooth. Add extracts and sugar. Mix well. Add eggs, one at a time, beating well after each addition. Remove 2 cups batter and place into another bowl. Stir melted chocolate into 2 cups batter, combine. Pour plain batter into pan. Place pan into a large casserole dish. Spoon chocolate batter into a pastry bag, fitted with a plain round tip. Place tip of bay 1/4 inch into cheesecake. Starting in center, squeeze out enough batter to form a 2 inch round ball. Using same procedure, squeeze out 6 smaller balls around rim. Place casserole dish, with pan in it, bake for 1 1/2 hours. Let cool completely and refrigerate overnight.
