CORNBREAD DUMPLINGS

1 1/2 cups cornmeal
1/2 cup flour
1 tsp baking powder
1/2 tsp salt
1/4 tsp pepper
1/2 cup buttermilk, more if needed
2 eggs, slightly beaten

Combine dry ingredients. In a separate bowl, whisk together buttermilk and eggs. Stir the wet mixture into the dry until just combined to form a thick batter. If the batter seems too dry, add 1-2 tbsp buttermilk.

To boiling broth, drop the dumpling batter into it, 1 tsp at a time. Simmer until cooked through, 20-25 minutes. Using a slotted spoon, transfer to dumplings in a bowl and spoon some broth over them. Serve hot. Serves 4-6
