BAKED GUMBO

2 tbsp butter
1 medium onion, chopped
1 lb boneless, skinless chicken thighs, chopped
3/4 lb smoked sausage or andouille, chopped
1 (10 oz) pkg frozen cut okra, thawed
1 (14 oz) can sliced tomatoes, undrained
1 1/2 cups long-grain white rice
2 1/2 cups chicken broth
Salt, pepper and garlic powder, to taste
2 bay leaves
Hot sauce, to taste

Preheat oven to 350. In a Dutch oven, melt butter and cook onion until softened, about 3-5 minutes. Add the chicken and cook, stirring occasionally, until just barely cooked through, about 5 minutes. Add the remaining ingredients and bring to a boil, stir, cover, and transfer to the oven to bake for 30 minutes or until rice is tender and the liquid has been absorbed. Remove the bay leaves before serving. Serves 6
