SMOKED SAUSAGE HARVEST CASSEROLE

2 tbsp butter
5 cups chopped green cabbage
1 medium onion, cut into halves and sliced
1 cup sliced carrots
1 (8 oz) can stewed tomatoes
1 tbsp vinegar
1/3 cup grated parmesan cheese
2 tbsp flour
Dash pepper
1 lb smoked sausage, cut into serving pieces
Preheat oven to 350. Melt butter in a Dutch oven over medium heat. Add vegetables and saute 5 minutes. Stir in tomatoes and vinegar. Sprinkle cheese, flour and pepper over cabbage mixture and stir to combine. Spoon into greased shallow casserole dish. Arrange sausage pieces on top of cabbage mixture and push down partially. Cover and bake for 40 minutes or until hot. Serves 6
