ANDOUILLE PASTA WITH BARBECUE CHICKEN

1 tbsp corn oil
2 oz chicken breast, cut into 3/4 inch cubes
Salt, pepper, cumin and cayenne pepper, to taste
2 oz andouille sausage
1 oz red or green bell pepper, cut into strips
1 oz red onion, cut into strips
1 tsp minced garlic
4 oz marinara sauce
2 oz hickory smoked barbecue sauce
1/2 cup provolone and smoked Gouda cheeses
1o oz rigatoni, cook al dente
Chopped green onions and cilantro leaves, garnish
Season chicken with salt, pepper, cumin and cayenne pepper and saute along with sausage in oil until chicken is no longer pink. Add vegetables and garlic. Cook until vegetables are limp. Add sauces and bring to a boil. Place cook pasta in a bowl and pour sauteed mixture on top of pasta. Top with shredded cheeses and garnish.
